La Dalu didn't begin in a boardroom. It began with a question asked over a still-steaming cup of single-estate Ceylon black tea: why does the most extraordinary raw ingredient in fermentation so rarely appear on the label? Most kombucha is brewed from commodity tea blends chosen for cost, not character. We chose a different path.
Ceylon tea — grown in the misty highlands of Sri Lanka, where altitude, rainfall, and red-iron soil converge — carries a flavor complexity that simply cannot be replicated elsewhere. That specificity is what drew us in. We spent years learning the fermentation rhythms that honor its terroir rather than erase it: the SCOBY strains, the brew temperatures, the secondary fermentation windows that coax out brightness without sacrificing depth.
